Carrot Cake

Carrot Cake by Suhailah

4 eggs

1 3/4 cup granulated sugar

2 teaspoon vanilla extract

 

2 cup plain flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

 

2 cup grated carrot (1 cawan grated kasar + 1 cawan halus)

1 cup vegetable oil

1 cup raisins (rendam kejap kasi lembut) and nuts (almond, walnut, hazelnut etc) – chopped

Lemon zest of approx 1 lemon (recommended) * saya pakai lemon juice dalam 1 tsp

 

Whisk bahan kering (flour, baking powder, sugar, baking soda, garam and cinnamon) — ketepikan

 

Beat eggs, sugar & vanilla sampai kembang — masuk bahan kering tadi

 

Mix in the carrots, raisins , nut, oil & lemon juice

 

Bakar at 180o X 30 min

 

Topping – Cream Cheese (rujuk resepi Red Velvet Cake)
