The current study was focusing on assessment of antioxidant and SOD enzyme activity of pigmented and non-pigmented upland rice seed as well as several other control varieties. This study is believed to unravel the knowledge on antioxidants in upland rice and to boost consumer awareness on the health benefits that it could provide. Besides that, work related on upland rice seed has also been performed previously yet there is still absence of work regarding antioxidant proteins from the protein identification data specifically on temperature stability and flexibility through computational molecular dynamics (MD) simulations via GROMACS.
